To make this wine, Cabernet Sauvignon and a bit of Malbec is harvested from a vineyard of red volcanic soil at an elevaDon over 2,000 E. above sea level. The grapes are crushed and fermented in stainless steel and then undergo approximately ten months oak aging before bottling. This is a wine to try side-by-side grilled lamb chops with a cilantro and mint sauce, or pizza with arugula, eggplant and mozzarella.
McManis Cabernet SauvignonDark garnet in color with a bouquet that is full of dark berry fruit, such as Blueberry, Blackberry and Black Cherry. Oak aging has contributed just a hint of smoke to the nose. The round, creamy wine delivers an abundance of the fruit flavors promised by the olfactory. The fruit and oak are well integrated and the complexity of the wine plays on the tongue long after the wine has been ingested.
