Amber color. An intense, lasting and spicy nose. A full and harmonious taste. The healthiest and most beautiful bunchers of Malvasia and Trebbiano were harvested in October. They were then hung up to dry on rafters in our Vinsantaia, a huge attic where the grapes are dried and the vinsanto stored, so it is effected by all the changes in temperature. By February the sugar content was high enough to press the shrivelled grapes. The highly concentrated must was then left to ferment in small oak casks where it was allowed to mature for a full five years.
